Frascati Superiore D.O.C.G.

Made from grapes of Malvasia Puntinata in purity, one of the greatest white grape varieties in our region, which is the highest expression in our territories, thanks to the passion and the care devoted to its cultivation. Our vineyards are planted in espalier with spurred cordon pruning with 5000 plants per hectare and a production of 1.5 kg of grapes per plant.

 

Wine making

After a short maceration the grapes are subjected to a soft pressing, the must obtained is brought to low temperature and left for 72 hours under stirring the particles of the pulp to ensure maximum extraction of all the components present in it. It is then clarified and fermented in stainless steel tanks at 15 ° temperature with selected yeasts. The wine remains with the fermentation lees for two weeks at a low temperature in agitation and subsequently left to mature on the lees for at least six months in order to enhance the organoleptic characteristics.

 

Color

Straw yellow with golden hues.

 

Fragrance

The aroma is intense and aromatic with pronounced notes of fruits and yellow flowers (mature apple, chamomile and jasmine), accompanied by delicate notes of tropical fruit and mineral notes which highlight its complexity.

 

Taste

The taste is of great personality and structure, pleasantly soft, in the final return to the nose typical aromatic notes.

 

Serving suggestions

It combines nicely with dishes based on fish, seafood and Roman dishes, as well as with cheese and grilled poultry.

 

Serving temperature

Made from a blend of Puntinata Malvasia, Trebbiano and Bombino cultivated with espalier with spurred cordon pruning with 5000 plants per hectare and a production of 2 kg of grapes per plant. In management are planned thinning of the shoots and then the clusters, with defogliature during veraison to ensure optimum ripeness as well as even greater health of the grapes.

 

Wine making

The grapes undergo a soft pressing, the must is refrigerated and promptly clarified. It is then fermented in stainless steel tanks at 17 ° temperature with selected yeasts. The wine remains with yeast fermentation for a week at low temperature in agitation and then left to mature on the lees for at least four months in order to enhance the organoleptic characteristics.

 

Color

Straw yellow with greenish hues.

 

Fragrance

The aroma is intense and aromatic with pronounced notes of fruits and yellow flowers (golden apple, banana and jasmine), accompanied by notes of tropical fruits.

 

Taste

The taste is of great personality and structure, pleasantly acidic and fresh, with an inviting flavor that brings out the full flavor.

 

Serving suggestions

It combines nicely with dishes based on fish, seafood and fries. Ideal for aperitifs and cold appetizers.

All aspects of cultivation, including harvesting, are carried out by hand. Cold extraction followed by continuous press transforms the olives into an extra virgin olive oil with a particular fragrance and delicate flavour.
